It was a nice long weekend here. Friday I went to a concert with my parents and boyfriend, Sat, Sun, and all day Mon. pretty much just hung around the house and relaxed! Took LOTS of looooooong naps too! it was great! I woke up his morning at 8 am refreshed and revived! I really exhausted myself last week. This week I will try to get to bed by 11 pm and get back to exercising!

I did well with the eating too! Weigh in tomorrow, but I am not holding my breathe. I have been a sloooow loser since the first 2 weeks, but I know I am sticking to it as best I can and have not intentionally eaten anything I shouldn'thave so I can't ask for anything else.

Sounds like eveyone had a busy weekend! Back to work!

I've been working on peaches today too, but unfortunately mine aren't home grown. I do have 2 dwarf peach trees but the peaches on them are hard as golf balls and not much bigger. LOL My peaches are from the Okanagan Valley in the southern interior of British Columbia and they are absolutely luscious. Of course, I only had a tiny sliver as I peeled them. I canned 7 jars and hope to bring several of them to our daughter in Scotland when we go. She just loves my canned peaches.

I stayed OP all weekend without any major difficulties. I hauled out a slab of frozen birthday cake to serve to some unexpected guests on Sunday but I wasn't even tempted to have a nibble of it and it went back into the freezer when they left. I think it really helps to have a legal sweet treat on hand as long as you can limit yourself. Just knowing that I can have it means that I'm not obsessing about it. LOL

Tonight I made some wonderful Chicken Cordon Bleu for dinner. I took two boneless, skinless chicken breasts and cut them partway through the middle. Then I pounded them to about 1/2 inch thickness. I seasoned them and on one side layered on thinly sliced ham and cheese (any kind of cheese will do. Swiss is traditional but I used mozzarella). Then I rolled them up and dipped in beaten egg and then in the Atkins breadcrumb coating mixture. I was surprised the coating was so good. I used ground up barbecue flavor pork rinds and an equal portion of soy protein isolate, ground flax seeds and parmesan cheese. Then I fried them up in some leftover bacon fat. Olive oil would be good too. I was surprised that Peter ate all of his because he's not a real fan of chicken but he likes just about anything breaded. Surprise...no breadcrumbs and very low carb.
I have extra crumbs now stored in the fridge for making fried chicken fingers. What a great recipe!

Jiff, you've lost two freaking hundred and eighty one pounds!!! I am so amazed and awed. And on top of all that you lost a hundred pounds before the stinking surgery!!!!! You are so doing it right, girl!!!
