Atkins - sick of eggs!!!

Ok I'm now just finished day 3 of Atkins, finding it easy peasy so far so good, but,,,,

Bloomin' sick of eggs and bacon for breakfast! I miss my toast and tea!!
Any suggestions? (about Breakfasts that is! :dizzy: )
Please bear in mind I'm in the UK so I don't have access to any Atkins products.
Thanks
Vix

PS *Waves* at Ruth, long time no speak! ;)

I am just finishing up my third day too! And I am feeling the same way about eggs--I've consumed a dozen in the last three days--BY MYSELF! That is rather mind-boggling to me!

I don't really have any suggestions for other breakfast foods (other than leftover meat from dinner the night before). I wish I did--I'd be eating them! :)

For the Quiche Lorraine one, I just do it like Julia Child does her quiches.

This is for a 13x9 cake pan. But, you can do it in any size pan, just adjust the amount of bacon & cheese.

First I cook a bunch of bacon, about a pound, cut it up in small pieces and put it in the pan; then I shred about 12-16 ounces of Swiss cheese and put that on top of the bacon.

Then I do the "Julia Child" Quiche as follows. This is the way she does all quiches no matter what the fillings are or what the size of the pan. It really works well.

"Julia Child's Quiche
Put your fillings into whatever pan/dish you want to use. Then you break an egg into a measuring cup, and add enough cream to bring the total volume to 1/2 cup. So, for a big quiche I might use 8-10 eggs. I break three eggs into a two cup measure, and then add enough cream to bring the total volume to 1-1/2 cups (1/2 cup per egg) and then I beat the eggs in the measuring cup (which is why I don't put in 4 eggs at a time into a 2 cup measure...you need room to beat them). Then I pour that over the fillings (gently so as not to disturb the filling). I repeat, using as many eggs/cream as necessary until the level of liquid is where I like it. "

Hang in there. You only have 11 more days of induction, where your carbs are slim and few. After that when you start adding a few carbs then you will have more choices. Try deviling those eggs and having them with a breakfast steak or porkchop instead of bacon.

DECADENT

If you are into smoked salmon:

-spread with cream cheese on slices of smoked salmon, roll them up and slice them to enjoy. Also makes a nice appetizer or snack when hungry!

Sue: Your recipe sounds wonderful and I was getting ready to make it and then noticed you didn't say how long you cooked it and what degree your oven was, or did I just miss somewhere?

Errrmmmm - back to haggis, is it?
There are other low carb plans besides Atkins. Do some research and you may find one that fits your lifestyle. How about CAD or CALP. Then you can have your darned baked potato.

Tell me more Ruth! CAD? CALP? Atkins sounds the biz in theory, but I get really bored eating the same kinds of foods. I suppose that's the problem with being brought up in a Scots-Italian family!

CAD CALP alows one rewrd meal it is low carb all day until the end of the day then it is divided up for 1:1:1 of protien:vegie:carb it does work and many people use that as a stepping stone for the actually low carb they find that once they get used to this woe then they are ready to go full force!!
