Bread substitute?

  • A while back on one of these threads, someone posted a recipe for a bread or bun lo-carb substitute that was baked in the oven. I think that it had egg whites as it base. If anyone can help me or suggest a bread substitute I would be very grateful.

  • Atkins makes a "baking mix" substitute that you can buy at Meijer's (I see you're in Ohio, so I assume you know what a Meijer's is?) You can go to their website and see it. They have a recipe for pancakes and stuff on the can. It's not cheap but it will work for some things.

    Also, on the "recipes" section, there is a recipe for pizza that basically uses an egg-fritatta type base for the "dough." I don't care for it much because I don't much like eggs, but others like it.
  • adrienne... i caught your other post about eating hard boiled eggs and not liking it. i'm not a real fan of plain hardboiled ones either, but i love deviled eggs...

    use some really good mustard and one of those flavored mayos. or some chili seasoning. or some hot sauce. or some salsa.

    or curry powder.

  • Jiffy - you're so good to me! Following me around from thread to thread giving me very GOOD advice! Maybe it IS time I added a few berries to my diet! I will try to make some deviled eggs this weekend. Also, I'm going to branch out to some tuna salad too!

    A couple things I've modified to fit low carb - Taco salads - love them! Now I just brown the beef, add a bit of taco seasoning, put it on top of shredded lettuce, some cheese and a tablespoon of HOT HOT salsa and a little dollup of sour cream. Not TOO bad carb-wise and tasty, too. Also my stir-fry. With Kikoman (no carb soy sauce) and red peppers, yellow peppers, garlic (only 2 cloves) and some onions I toss together with pork or chicken and add an egg or two. I miss the rice, but if you put like a half pound of meat, it can really make for a filling meal. And relatively low carb (I can keep it at about 14 carbs with the peppers, onions etc.)

    I've got the Atkins bake mix and I've only used it once - I made zucchini cakes. Two small zucchinis, shredded, water squeezed out, two eggs, 1/4 c baking mix, lemon zest and 2 cloves garlic. Mix and fry in little pancake-sized portions. Serve with Tabasco or Red Hot. Not bad. Just a bit of work. Maybe I'll go post this on the recipes board!
