I've read about it and read about it...so I'm gonna give it a try. I'm sure I'll be back to this forum for a lot of support :lol:
I just don't know how I'm gonna do it...heck I love my breads, pasta, and rice! :( But I'll just have to adjust. I'm not officially starting til next week...however, this week all's what I had for lunch was a salad and then at supper a little piece of meat and a veggie. And nothing for dessert :D So it's a start! ;)

Which Low Carb Plan are you thinking of following? It's very important that you read the books. Perhaps you can borrow them from the library. I am recently diagnosed as Type II and am using Bernstein's book, a low carb approach to managing BGL.

Welcome! The only advice I can give any trying to low carb in Mississippi is to stay away from Biloxi! Those casino buffets are deadly. ( Casino Magic has the world's best cheesecake. )
