Snack Ideas
What are your favorite low carb snacks!? I need ideas, this is D-Day (Detox!) and I know I will have major munchies. I know of so many snacks, but I need psychological help with ladies saying mmmmmmmmmmm, cauliflower and ranch dressing! Mmmm, a yummy tasty handful of nuts!
Today, nothing will sound good and yummy but chips and salsa from the local mexican restaurant with all those cute waiters. :s: |
OK, this is my favourite snackie--legal pizza! I posted it on another thread around here somewhere, let me go look for it...
OK, I couldn't find it but here's my version 2 scoops 100% pure soy protein isolate 1 Tablespoon heavy cream 1 Tablespoon pesto 1 Tablespoon grated parmesan cheese 1/3 Cup + 2 Tablespoons cold water Preheat oven to 375 degrees. Mix all ingredients in a bowl and mash together with a fork. Texture should be somewhat dough-like. Grease a cookie sheet with butter. Take dough and form into a ball onto cookie sheet and press down with palm until it's about 6" or so in diameter. Bake for about 10 to 15 minutes until it's a bit crispy and slightly brown along the edges. Use your low carb toppings--mushrooms, green peepers, whatever meat you like and use tomato paste for sauce (but read the labels for carbs), cheese. Bake for another 5 minutes until cheese is melted. Be careful transferring to plate since the crust can fall apart easily. Tilt cookie sheet and slide it onto the plate |

Legal nachos! They have gotten me through a few tough evenings this week! ground beef cooked with chili or taco seasoning and salsa. Make it very thick and eat it off a plate with melted cheese over the top; you can feel decadent by having a little sour cream on each spoonful. If you are having a few carbs(like Protein Power or Schwartzbein) you could stir a few black beans into the meat, or scoop it up with a few tortilla chips. 11 grams carb for about 8 or 9 chips. but I don't bother, just eat it with a spoon! If you have the whole wheat low carb tortillas, you could cut them into 1/8ths and toast them. Or pour the mixture over shredded lettuce and use some ranch dressing- TACO SALAD! I also eat deviled eggs, salami and cream cheese roll ups, and celery with dips- Maries Blue cheese is my favorite, or good old sour cream onion dip. Cheese chunks, cottage cheese(4g. per 1/2 c.) tuna with mayo, chicken salad, egg salad chicken thighs or drumsticks, or hot wings? jello with real whipped cream grilled Italian sausages or meatballs with mozarella melted on them. i'm with you on the deviled egg thing. i put chinese chili paste and tabasco sauce in mine. still can't keep a scrambled egg down though!!!! roasted soybeans. they come in all kinds of flavors. if you can find them, the ranch ones are excellent, the barbecue is pretty good, and i don't like the hickory smoked ones. the honey roasted ones are the best, but maybe a few too many carbs... are frozen cooked shrimp on sale near you jennifer? they are around here. they're a nice snack. meal. make your own cheese balls with cream cheese and whatever shredded cheese you want. and roll in chopped nuts. at least this way you won't get anything weird in them that adds carbs or just roll cream cheese balls in STUFF: paprika, parsley, nuts, other herbs, whatever. good luck!!!! you can do this!!!!! |

I made your taco salad thingy tonight for supper it looked so good! It was delicious! Since I cant eat lettuce I topped it with broccoli and then added the cheddar cheese and sour cream.

Slice up some pepperoni and nuke it... it makes it crunchy and salty. You can also nuke some turkey bacon until its really crispy.
Melt some grated cheese in a tef pan... brown it, flip it, brown the other side, let it cool and waa laah, crispy cheese crisps you can use as a cracker or chip. Dotti, Marie's blue cheese is my fav too !! :D Now I'm HUNGRY ! |

What about pork rinds? I happen to love them, although they gross some people out. One of my favorite meals is egg salad spread on pork rinds with sprouts on top. You can have sour cream with pork rinds too for that crunchy/salty/creamy mix that is soooo good. It's hard for me to get psyched about cauliflower so I won't suggest that! How about cream cheese (flavored, like salmon or vegetable) spread on a cheese crisp? String cheese? One problem I notice is that doing low carb means things are very salty most of the time. Right now I'm allowing myself some berries (with real whipped cream...mmmmm). I had some of the Atkins advantage bars last week and despite what they say about most of it being non impact carbs, I still feel it undermined my efforts. Other snack ideas might be a hard boiled egg, deli slices rolled up with cream cheese in the middle, celery with cream cheese wrapped in a slice of ham. Are you feeling hungry yet? Leens beat me to it with the nuked peperoni slices! They are just so delish that I HIGHLY recommend them to anyone that hasn't tried them.
Another thing I use when I'm having a bad time is a spoonful of sugarfree crunchy peanut butter. That might not be good for everyone but when I'm feeling the 'cheaties' coming on I grab a spoon of PB and eat it real slow and it helps. Kel |
I've been snacking on the low carb cheesecake I made the other day. I posted the recipe a couple of days ago in the daily thread. It is SOOOOO satisfying you only need a thin slice. With a dollop of real whipped cream it is a really luscious, sinful snack.
I also like to cook a large batch of chicken wings in the oven on a rack so most of the fat drips off and they get so crunchy you can almost eat the bones. Instead of making savory cheese balls., take a hefty spoonful of full fat cream cheese, add some artificial sweetener and some cocoa. Mix well and form into balls. Roll into cocoa for a low carb chocolate fix. |
