Newbie and Q about Edamame
 
Hello Ladies - I just signed up and am soooooooo excited to find a community that understands LC! I've had success before with Atkins, but after baby #3 and two years of trying to pretend I really can tolerate carbs, I finally realize that if I'm ever going to be healthy, I need to change my life and WOE so here I am! :p

I have a question that I keep getting conflicting results when I've tried label reading....I enjoy eating edamame (the green soybeans in a pod) - carb counters seem to put the carb count much higher than that label on the bag. According to the bag, total carbs per serving = 5 g and fiber per serving = 5 g (protein = 6.5 g). My logic would be that this is something I can eat freely because the fiber cancels the carbs. Anyone have an opinion or experiences w/edamame??? Thanks - I look forward to getting to know you all!:)

Welcome to the Low Carb! board of this wonderful 3FC website. I am sure you will enjoy being here - lots of smart, funny and supportive chicks here.

As to edamame, some plans say you can subtract fiber from carbs, in which case you would be taking in 0 carbs. However, on Atkins induction, I would be very careful - some folks find that even the Atkins low carb bars make them go out of ketosis.

Ditto's on what Ruthie said. I remember doing Atkins and in the begining eating to much brocolli, now how that would throw me off who know's but it did.

welcome desertduck!!! GLAD TO HAVE YOU!!! what does edamame taste like? i've been really enjoying the toasted soy nuts, but would love to try the fresh ones...

and i have no wisdom about the atkins thing.. but ruth and leenie sure do know!!!

Jif..... edamame is wonderful!!! I haven't had any since I began Atkins.... just cause it is one of my "addictions" - once I begin to shell those suckers, I simply cannot stop 'til they're all gone........ not as good as chocolate mousse cake, but yummmm all the same!! :D

Welcome to 3FC, Desertduck! Do the beans have a strong soy taste? I've been curious about them. About eating them...I would go into ketosis first, then eat them and see if it takes you out. If it doesn't, then it is safe to eat! Are you very carb sensitive?

Thanks for all of the responses - it's hard to describe the flavor of edamame, but I don't think it's too "soyish" - and yes, if I prepare too many - they are addictive!:o We just returned from vacation so now that I have access to the good ol' ketostix, I'll see what happens if I experiment after induction.

Tomorrow marks one week low carbing - I feel great and remember WHY I loved getting off carbs in the first place! (Now if I could only remember that when faced with french fries and ice cream!).

I truly appreciate your support - I am SO determined to live and be healthy - it's great to meet new people with the same goals.

Edamame are wonderful. They remind me a little bit of eating nuts. I can't explain why, but they do. I got them fresh at Trader Joe's and they were awesome. I've bought some frozen ones but haven't tried them yet. They don't taste like processed soy foods at all, but very fresh, nice crunch, yummm! I was not expecting to like them nearly as much as I do.

Dawnajoy - I have gotten them frozen from Trader's (and also reg. grocery store). You can steam, boil or microwave them, but I think they are best steamed - boiling and microwaving made 'em a bit more soggy - but I still liked 'em!

BTW, after watching carefully (thanks Jennifer and Ruth!) I have eaten them twice in about a cup portion and they haven't thrown me out of ketosis! Yeah! :-)
