Cellophane bean threads
 
Hi All ........First let me say "What a GREAT site!!"

I have a question regarding cellophan bean threads......Ive tried to do some research online regarding these, but all I seem to find is how to cook them and what they are made of.
....as a low carb dieter, can I treat these as beans? They are fast, easy and tastey. They will substitute the texture and taste of pasta when I have "that" craving.

Any thoughts out there?

Nice to meet you!

Now, I haven't the faintest idea what cellophane bean threads are but am calling my DD as we speak as she eats ALOT of beans. Hopefully I can get her here soon to share her knowledge. If not, there are so many wonderful cooks and knowledgeable cooks here....I'm sure one will show up with some answer shortly!

i think bean threads are made from soybeans, and count as a veg, rather than a carb. but i'm not absolutely sure...

ok I found out that they are noodles made from a mung bean! kinda cool.

it is an asian food used in thai cooking. Here is the nutitional information. Only you ccan decise on the low carb part as many pople here have different limets on their carb intake.

Ive read where it is made from ground mung beans, and other types of beans, and ive also read that it is made from mung bean starch.......the word starch being what worries me.

Tonight I had bean threads with scallops, green beans, and sesame seeds....and its 4 hours later, and im just starting to get hungry (this is really good for me)....I suppose what I want to know is... Is it a true bean product? I hope Im making sense.

Hi Robin!

I don't have any info for you on the bean thing...just wanted to say "hey" and welcome and I often use shredded cabbage as pasta. It is not too bad if you close your eyes and use your imagination! I have made lasagna using it instead of the noodles and it was pretty good ANDI KNOW it is a veggie!

(I am pathetic!)

and peachie almost tried once!!!

and no L, i'm not always on the ball. i was just wondering if it was something i could eat occasionally, like a tablespoon or so. we're not allowed to eat anything with more than 15 g of carb in it, so it's great to know that i can have it. there's no protein to speak of, but that's ok. if i eat it with some shrimp or toss it with a little peanut butter, that'll be just fine. a tablespoon at a time.

Love those!! :smug:

A few recipes come to mind .....

They are sooooooooo versatile and fun!!

Soak them in chicken broth ...
Saute a few scallions and ginger ....
Add in a few slices of chicken .....
And when the chicken is almost done add in some mushrooms and spinach ....

It is a truly awesome dish!!
I add a little curry to mine ... and lots of garlic ...

As I have not been eating meat lately ..... I like to eat it with my fave veggies and a ginger sauce on top of it with some sauteed tofu!! :) :) :)

I'll post the ginger sauce recipe later .....
But it is really great on top of veggies ... *s
And ok for low carb I think ... (made with tapioca flour):?:

I picked mine up at an asian grocery store....although Wegmans had them instock, just a bit more pricey. :)

I love bean threads, too, but think of them as a carb, so I would only have a big serving with my CAD reward meal. But they're great in soups, and you wouldn't need a whole serving.

I'm totally in love with spaghetti squash as my pasta alternative! jaelynn
