Another recipe.... by request...

  • Here is another recipe I have picked up along my low carb journey. I take NO credit for this one.... I got it from someone on another low carb site.... but it is SOOOOO good, I have to share it. You may already have it, but just incase, here it is....

    PANCAKES

    Ingredients-
    *4 ounces of softened cream cheese
    *2 eggs- seperated
    (that's it!!!)

    *In one bowl, mix the cream cheese and egg YOLKS
    *In another bowl, beat the egg whites until stiff.
    *Fold the egg whites into the cream cheese and yolk mixture (the recipe says to mix all of the stiffened egg whites, but I only use about half)
    *Cook exactly as you would cook pancakes. Do not make them too big or they will fall apart when you flip them.

    I have a couple tips for you.... Cook half of the mixture and set aside. Then take the remaining half and add 2 packets of splenda and then cook the same. You can save these for a quick sweet snack.

    The ones you did not add splenda too...... BARELY melt some butter (just melted enough that it stirs easily) and add a packet of splenda and a small dash of maple extract (extract is optional). Stir it all together and you have a yummy sweet syrup. Pour over your pancakes and enjoy.

    You can also get creative with these.... adding banana extract to the pancake mixture to have banana pancakes... whatever your imagination conjures up.

    I hope you like them. It is such a nice break from eggs.

    I also like to take the mixture (with splenda added) and cook them like scrambled eggs. They do not look or taste like eggs, but they are DELICIOUS.
