How much does our diet affect our hair??

Recently I started to develop almost like bumped in my hair. Not really dandruff but kinda like bumps of build up? I've tried several " dandruff " conditioners ... including a t-gel and it seems to clear it up but if I dont use it everyday, it comes back worse. Ive made an appt with the doctor but thought Id see if anyone else has anything to suggest about this. I'm wondering if my water intake had anything to do with problems with my scalp. I rarely ever drank water before I went on my diet ... so maybe now that I have a good water intake, it'll help my scalp?? Any thoughts?
