Thanks for all the great ideas. :hug: I'm going to use some of them right away. Now, for the next question....so many of you mentioned soup as a great choice that I'm hoping you'll join another thread I've started and share soup recipes. ;)

Oh my goodness. I'm a soup fiend. I have lots of favorites and I don't really use recipes precisely. I pretty much always start with a base of TONS of onions, peppers, carrot, garlic and zucchini. If I have other veggies around, I throw those in too. Tons of veggies. And then the rest. I make a Sweet Potato, Peanut Butter and Chicken soup that is DELICIOUS. Just throw in chunks of sweet potato after the veggies are done, add chicken stock and canned tomatoes and simmer for a while. Then add seasonings: peanut butter (about cinnamon and simmer it up. Yum! (I got the idea for the recipe here: Cooking Light, but I don't understand why you would make a soup with canned soup and salsa. Makes no sense.) ETA: I add barley to this soup, instead of the beans. It usually comes in at around 300 cals/serving.

We also do a mexiesque chicken and black bean, which has the same super-veggie base and tons of cumin, coriander, cilantro, chipotles, corn and etc to become delicious.

Soups are a great food for cooking intuitively, although I always add all those veggies because they really keep the volume up and the calories low. I've even made a Thai chicken curry soup with all the veggies and it is totally fine and totally yummy.

During football season, I like to make big batches of chicken or turkey chilli on the weekends. I pack those into small ziploc bags, then throw 'em in the freezer. Great lunch; easy, tasty, very filling. Generally get a lot of jealous comments in the office :)

A recent favorite is a bit of a "throwback" meal-- a small whole wheat pita with 2 T natural peanut butter and a half a banana mashed in (I eat the other half of the banana about a half hour later). It's not exactly the most "professional" meal, but it totally reminds me of my Sesame Street days!

Wow these are really great ideas! My DH and I just make enough for dinner to take for lunch. If I didn't have lunch I would probably get a healthy frozen dinner. Or sometimes I will get a Wendy's small chili and side salad.
