Hi everyone!
We have two cadbury eggs sitting on our counter waiting for passover to end tomorrow!

I'm actually pretty surprised that the Passover diet seems to have worked, especially considering we ate a can and a half of macaroons over the past three days. My scale was at 132 this morning (down from 133/134) and my fiance weighed in down 5lbs to 191 at the gym Friday.
Anyway I guess that just goes to show how many calories I usually get from rice and pasta. Of course after the deprivation I am planning on eating both this coming week!
Actually I know the real reason the Passover diet works -- because it gives me the extra willpower to resist the junk food at work. Today there are donuts, a coconut cake with some kind of fruit filling, easter pie, scones, and more cake sitting around the office (people's easter leftovers!). If it wasn't Passover I know I would have eaten at least one of those items, but since none of them are allowed I haven't touched them!
My fiance liked the meatloaf I made last week so much he had me make TWO meatloafs (meatloaves?) last night so we'd have more leftovers!

That's a lot of meatloaf for two people!
Elana -- I splurge on desserts for special occasions, but most of the time my dessert recipes come from Cooking Light (like everything else I cook). So they are already tweaked a little bit! Sometimes I do even more tweaking by substituting whole wheat pastry flour and yogurt for the fats.
Allison -- your dinner sounds delicious!
Today I'm going back to my wrist doctor. I wasn't supposed to go back until May 9, but I was having extra problems so they scheduled me in earlier. Of course in the three days since I called to make the appointment it's gotten mostly better, but I figured at this point it was too late to cancel. I'm guessing he will just tell me to chill out and come back May 9.
