Sausage Biscuits
 
Turkey Sausage

Ingredients:

10 or 14 oz ground turkey breast, size
according to plan
1/2 tsp dried sage
1/4 tsp ground black pepper
1/4 tsp cayenne pepper
1/4 tsp Morton Lite Salt

Preparation Instructions:
In large bowl, combine turkey and
seasonings. Mix thoroughly. Divide
evenly and shape into 2.5-3.5 oz patties,
size according to plan. Heat skillet,
coated with nonfat cooking spray, over a
medium flame. Add patties to skillet and
cook thoroughly on each side, or to an
internal temperature of 165°F.
Uncooked patties may be frozen.

Buttermilk Biscuits

Ingredients:


2 1/2 cups all-purpose flour
1 Tbsp sugar
1 Tbsp Splenda®
1/2 tsp baking powder
1/2 tsp salt
4 Tbsp cold butter, cubed
4 Tbsp cold light margarine or butter, cubed
1/4 cup warm water
1 package active dry yeast
3/4 cup warm, low-fat buttermilk



Preparation Instructions:
In large bowl, combine flour, sugar,
Splenda ® , baking powder, and
salt. Cut in butter and margarine to
flour mixture, using a pastry blender or 2
knives, until mixture resembles large
crumbs, set aside. Place warm water in a
small bowl; sprinkle in yeast and stir
until dissolved. Add yeast mixture and
warm buttermilk to flour mixture, stir
until well-blended. Turn out dough onto
a floured surface. Knead dough until
smooth. Form into a ball. With a rolling
pin, roll out dough to about a 1-inch
thickness. Cut biscuits with a 2 or 2
1/2-inch biscuit cutter. Place biscuits
onto a baking sheet coated with nonstick
cooking spray. Cover biscuits and let
rest until doubled in size, about 30 to 45
minutes. Meanwhile, preheat oven to 400
° F. Bake in oven for approximately 15 minutes, or until lightly
browned.

Makes 1 dozen biscuits
