With the weather getting colder and it getting dark so early, the last thing I want to do when I get home from work and picking up the kids from the sitter is cook but the first thing out of everybody's mouth is "What's for Dinner?"
I was at Target this weekend and I bought a Crock Pot thinking how nice would it be to come home to dinner being ready. My family is vegetarian however we do a lot of the Morningstar Farms and Boca Meat Substitutes. I was just hoping to get some healthy, home cooked recipes that I can have on the table in minutes when I get home.

I love doing soup in my crock pot, you can cut all your veggies up and toss them in with your broth and seasonings, leave it all day and then when you get home puree it with a submersion blender (or pour it into a blender) and add your last minute stuff like a bit of cream (if you aren't vegan).
I love doing cream of broccoli
I'll wing the recipe for you...
Chop some onions & garlic and sautee in some olive oil until cooked
Throw in pot
Peel and quarter 2 medium white potatoes
Throw in pot
Seperate flourettes of 2 heads of broccoli
Throw in pot
Salt n' Pepper
And add enought vegetable broth to cover all of the veggies
when you get home puree until smooth and add a bit of milk or cream
if you like.
The kids will never know its vegetables, my friend's 6yr old couldn't get enough.
This recipe can be altered to be any vegetable.

Crock Pot Beef Stew
Here is one from the LA At Home Website. I have not tried it, but it looks good.

Recipe Name: Crock Pot Beef Stew
Ingredients:
1 1/2 to 2 lbs beef roast, such as round or loin, cubed, size according to plan
1 tsp Worcestershire sauce
1/4 cup flour
1 tsp Morton Lite Salt
1/2 tsp pepper
1 tsp paprika
1 1/2 cups reduced-sodium beef broth
half garlic clove, minced
1 bay leaf
4 medium carrots, sliced
2 medium onions, chopped
1 rib celery, sliced
3 small potatoes, diced
Preparation:
Place meat in slow cooker. Combine flour, salt, pepper and paprika. Stir into meat until coated thoroughly.
Add remaining ingredients. Mix well.
Cover. Cook on Low 10 - 12 hours, or High 4-6 hours.
Stir before serving.
Makes: 6 servings
Serving size: 1/6 recipe
