White Chicken Chili

  • White Chicken Chili (From Cookbook)

    Ingredients:

    12 or 16 oz ground white meat chicken breast
    5 green onions, chopped
    1/2 white onion, chopped
    2 small tomatoes, chopped
    1 cup sliced fresh mushroom
    3 garlic cloves, minced
    1-2 tsp chili powder, to taste
    1/4 tsp Morton Lite Salt®
    1/4 tsp ground cumin
    1/2 cup dried cooked white beans
    2 1/2 cups Herb-Ox® very low-sodium
    chicken broth
    1 tsp cilantro
    Dash of hot sauce



    Preparation Instructions:
    Coat large saucepan with nonfat cooking
    spray. Add green and white onions and
    mushrooms to pan; saute 2 minutes. Add
    chicken, tomato, garlic, chili powder,
    salt, cilantro, and cumin to pot. Cook
    until chicken is browned. Add broth and
    beans. Bring to a boil, cover and reduce
    heat. Simmer 30 minutes, or until
    reaches desired consistency. You may add a
    dash of hot sauce to reach your desired
    taste.

    Makes 2 Serving

  • Cassi- I have made this and it is really good!!
    A couple of changes I made was:
    subbed LS V-8 for the tomatoes
    skipped the shrooms
    added green chilies and some green chili salsa
