Cheeseburger and Fries Casserole
 
I haven't tried this one yet but it was a recipe makeover from the la chef online


Cheeseburger and Fries Casserole

Ingredients:

2 pounds lean ground beef or lean ground turkey breast
2 cups shredded, reduced-fat cheddar cheese
½ cup 1% milk
1 (10 3/4 ounce) can condensed reduced-fat, reduced-sodium mushroom soup, undiluted
1 (20 ounce) package frozen French fries


Preparation:

In a skillet brown the beef and drain excess fat.
Stir in the cheese, milk, and soup.
Pour into a 9 x 13-inch baking dish coated with cooking spray.
Arrange French fries on top.
Bake uncovered for 50 to 55 minutes at 350 degrees F, or until the fries are golden brown.

Makes: 8 servings

Serving size: 1/8 recipe

Racegrl - When I made this, it was good (and I will make it again), but did you find that the french fries didn't really get crisp? I think the next time I will throw it under the broiler for a few minutes at the end to crisp it up.

I used crispie fries when I made this, it came in a 20 oz. bag still. I hope I did not make it "bad" for LAWL but it certainly made the fries crispie.

This is really similar to a recipe that my mom used to make all the time called Tater Tot Casserole. The difference other than obviously, tater tots instead of french fries, is that she used to put in corn and green beans. She also put the cheese on top if the meat and then put the tator tots on top of the cheese. It was always a favorite of mine.

I've not made the LAWL version of this, but yeah, the tater-tot casserole version is my daughter's favorite. For that version, I cook it only about 30 mins at 425 degrees. That heats it faster (obviously) and also makes the tots crispy. I'll test it out with the fries version and see how it goes. :)

I made this last night, and everyone loved it. My aunt mentioned that she would love to have some diced tomatoes, green onions and green peppers on top of it. Sounds good...I wonder if I could just add that and call it 1V?

Depending on how much you ingest, I dont' see why not... The Diced tomatoes in the "Talapia Italiano" count as a veg.. .

One word of caution. And maybe you all know this and I'm just finding it out.. Canned tomatos have a TON of sodium (at least as it relates to LAWL)! I was able to find very low sodium canned/diced tomatoes luckily..

This is absolutely DELISH!! My 3 year old ate it up faster than he's eaten anything ever! And that says alot. It even warms up really well for leftovers! I just preportioned some out for me for the next couple days. As for adding veggies to it, I get bags of frozen veggies at the store and add it directly to the top of mine and count it as a full veggie. Kroger has a bag of 3 pepper and onion mix that it great for this and other stuff, too (like omelettes). Just portion out some of the casserole and a cup of the veggie mix on top, reheat for a couple minutes in the microwave and it's the perfect lunch!!:D
