Default Mushroom Recipies

I absolutely LOVE mushrooms, does anyone know any good recipes with them?
I'm so tired of chicken and mixed veggies, I want something good.
And GOOD to me is Mushrooms!

I'd like the peppers & Mushroom recipe, i've go the other 2, Have you tried any of them?

No, I haven't tried any. I'm the only one in my house who will eat mushrooms.

Peppers & Mushrooms
Makes 3-4 servings -- Serving Size 1 cup
Counts as 2 V


3 T low sodium vegetable broth
1 onin, cut into wedges
2 garlic cloves, crushed
1 green bell pepper, cut into 1/4" strips
1 sweet red pepper, cut into 1/4" strips
1/2 lb mushrooms, sliced
3 sweet chili peppers, chopped, such as italian frying peppers
1 tsp cilantro, chopped
black pepper to taste
1 T fresh parsley, chopped (optional)

Heat broth in skillet; add onion and garlic and saute until onion is translucent
Add peppers, mushrooms & cilantro
Stir-fry until peppers are tender
add black pepper and cook 1 minute
Sprinkle w/parsley, if desired, and serve.

This is a recipe you will just have to improvise and change depending on what you portions you need, but I lite salt and bake mushrooms (stems off, gill side down) in the oven at 350 until they look done. I then saute chopped fresh baby spinach (and maybe a green onion) with a minced fresh clove of garlic in a teflon skillet (using pam) and mix this with either a TBSP of cream cheese, fat free cream cheese, or some laughing cow light soft cheese (don't salt the spinach if you plan on using the laughing cow or it will be too salty). Stuff the mushrooms with the spinach mixture and bake until they are heated through. You can adjust the recipe to how many veg you need or if you need the dairy, fat, or condiment. It is really good to stuff the mushrooms with a cheddar jack, some ff cream cheese, and green onions, too. I am going to flash freezing these to see if I can have them ready for baking at any given moment. I really like em, and it feels more like eating a starch than a veg as weird as that sounds.
