I would LOVE the recipe for the Beef and Broccoli if someone has it and is willing to post it. Please, please, please....

Here ya go...

Beef and Broccoli

4 or 6 oz beef round steak, size according to plan
1 TBSP low-sodium soy sauce
1 TBSP vinegar
1 TBSP Sugar Twin Bron Sugar
1 garlic clove, minced
1/4 tsp crushed red pepper
1/2 medium carrot, thinly sliced
1 Cup fresh broccoli florets
1 tsp cornstarch
1 TBSP water

Partially freeze meat, thinly slice meat acorss the grain into bite-size strips. Set aside.

In bowl, stir together soy sauce, vinegar, sugar, garlic and red pepper. Stir in meat. Cover and refrigerate for 10 minutes.

Coat skillet with nonfat cooking spray and heat over medium high flame; add sauce mixture and meat. Cook until meat is no longer pink.

Add vegatables and cook until vegatables are tender.

Whisk together cornstarch and water, stir into skillet and cook until thickened.

May be served over brown rice for an additional starch exchange.

Breakdown:

1 Protein
2 Vegatables

Makes on serving.

I fixed this in two batchs... one exactly as is for me and one with larger portions for DH. He thought it was great. Didn't even taste like diet food. ;)

Joan - Thank you so much for the recipe. I will be making that tonight!

Joan, could you post this recipe in the recipe thread. It sounds like a good one.

Mary, I'm sure you could make it with chicken also, if you don't have the steak. I would make it both ways and see which way you like the best.

My DH liked it too. I Couldn't believe it, because everytime I take out the LAWL cookbook he starts in about "Diet food". Sigh

It was very good. Another variation might be to use mandarin oranges and slivered almonds! I love the new recipes but DH asked me tonight if we're going to be having Chinese food every night this week, LOL! A LOT of the recipes are asian inspired!

Does anyone live in Oklahoma and if they do does their centers have the new cookbook? My doesn't and I go to Edmond. Just wondering my mouth is watering over all the talk to see the new cookbook.
thanks,
ptspeced
