Hello

I am not a big fish eater but I am getting really sick of all the chicken and turkey that I've been eating lately. Does anyone have any suggestions for quick and easy fish recipes? I'm on the first four weeks of plan 3 w/ lites.

Baked Tilapia with Parmesan Cheese






Ingredients:

4 Tilapia fillets (about 4-6oz per fillet), size according to plan
3 Tbsp fat-free Ranch Dressing
4 Tbsp Parmesan Cheese
Lemon Juice, to taste
¼ tsp Morton Lite Salt

Preparation:

Lay fillets out on a cookie sheet and lightly salt each piece. Spread lite ranch dressing over each fillet. It doesn't have to be thick or opaque, so you may not use all of the dressing. Sprinkle each fillet with parmesan cheese. Squirt with a little lemon juice. Bake for 12 minutes for each of thickness at 375 degrees uncovered.

Makes: 4 servings

Serving size: ¼ recipe
Pure Exchange: 1 Protein, 1 Condiment

My dh likes to eat tuna sandwiches. You couldn't pay me enough but he likes them.
I also cook shrimp with lime and garlic and butter spray.

You could always go with cottage cheese, light cheese or nuts for protein.

Have you ever tried the cottage cheese pancake recipe? It's the BEST!!

Baked Garlic and Pepper Tilapia

I just buy the frozen filets and then sprinkle granulated garlic (not salt) and pepper on them and bake. I love garlic so I load it and I like pepper too so I tend to put lots and sometimes add red pepper flakes as well for a zip.


Dilled Salmon

Again frozen filets and cover with dill and a little garlic as well. Bake.


Both are easy as anything and taste yummo!

I also stir fry scallops and/or shrimp in - you guessed it - garlic and pepper or in lemon and pepper.

Big on seafood up here. I have it at least 3x a week or more.

Oh, girl.......we just bought some orange roughy from Sam's the other day.....with some citrus seasoning they sell...........all we did was pan fry it in a bit of oil with the seasoning on it.......it was fantastic :) I had never had orange roughy, so I was a bit nervous.....but it was GOOOOOD!!!!

I like any fish on the foreman grill. It dries it out so it is more like chicken and I like that, then I add a bit of lemon juice and mrs dash lemon pepper or dill. If you drink soy milk (8oz), it is a good protein and also and sort of tofu. I find if I am eating that, I burn faster. I can't do much for fish, I eat tuna but don't really like it unless I toss it in with my salad. Hope you find some new ideas that you like.

I love doing salmon in the oven in a foil packet-just put your salmon on a huge bed of fresh spinach (like the whole bag-it really shrinks), add some chopped tomatos or whole cherry tomatoes, maybe some sliced onion, or sliced zucchini-basically whatever veggies you have on hand. Then drizzle low sod soy sauce or squirt lemon or drizzle a little oil and vinegar over the top, wrap up and bake at about 350 until it smells really yummy. Maybe 30 min or so . . . .

It's really easy, no clean-up and you can make it just the way you like. This works with any firm fish . . .tilapia,halibut, etc.

I use haddock and just spray a little becel spray and sprinkle Ms Dash seasoning and bake it in the oven. It is delicious!

I buy the 4 lb box of tilapia fillets and thats what I use as my "go to" when I am in a hurry or out of ideas. I thaw, sprinkle with spray oil and sprinkle on any of the Mrs Dashs seasonings and cook a few minutes each side in my cast iron skillet. Awesome everytime! My BF is also a big salmon eater and I do that with soy sauce and toasted sesame seeds.
