What Do I do with these small egg like veggie.
 
I was at the farmers market picking up some fresh veggies. I picked up what I thought was a craft egg. It turns out it's a veggie. I can't recall the name it's small white and spaced like an egg with a green top. I think she said it was an eggplant. How is it cooked she said in stir fry. I do love stir fry but am looking to see if you guys know what it is and ways to cook it.

I also picked up some black tomatos. Never seen or heard of them before. Can't wait to mix these up in a salad. Red carrots and a couple other tomatos that were oddly shaped and named. I also picked up some real yummy honey.

Oh yea I picked up some beets and I'm not sure what to do with those. I got the big kind that has red and white rings inside.

I dunno, but it could indeed be some kind of eggplant? I know when we hear "eggplant" we default to thinking "those honkin' great purple things", but I see some kinds of eggplants at farmers' markets that are small and kind of streaky green and white and look maybe like a heritage breed of tomato. Just a wild-@$$ guess

They're definitely a variety of eggplant. I cut them in half or quarters, toss in a ziploc bag or tupperware container with about 1 tbs canola or olive oil, and then add tbs of ranch dressing powder or some pepper, garlic powder, and seasining salt. I pour them out into a glass or metal baking dish or baking sheet and bake in the oven at 425 for about 40 minutes (until they're soft inside, and carmelized - just a little brown around the edges).

I've also sliced them thin and sauteed them with onions in a little bit of oil or butter and seasoned with soy sauce and garlic powder (with or without thin slices of beef).

Thanks ANOther and kaplods for the feedback. The recipes sound wonderful I can't wait to give them a try and hopefully find another veggie to my list!
