The Best Dinner EVER!?
Hi ladies and Gents!
I want to make something different for dinner tonight, Seriously I am sooo bored with regular chicken breast. Does anyone have any cheap options for a delicious dinner for two? Any help is greatly appreciated. By cheap I mean like under $10.00 ha! |
What about fajitas?
Lots of peppers and onions, use 2 of the little shells which are only 80 calories each. Add in chicken and that fajita sauce is only 40 calories for the whole package. Have two of them with a salad and some fruit or jello for dessert. |
How about frozen spinach, peppers, onions and throw a veggie burger/shrimp/chicken on top... Mix in some garlic/spices and parmesan or feta cheese and balsamic vinegar.

Cecilia, Katie had a recipie posted somewhere for a Chicken Marsala that I made and it was just fantastic.

OK I went and found it. It was originally from the recipe thread but Katie reposted it not too long ago
Chicken Marsala 1 P, 2 V 6 oz or 8 oz boneless skinless chicken breast 1 C fresh mushrooms 5 green onions sliced 2 T water 1/8 t Morton lite salt 1/4 C dry Marsala or cooking sherry With meat mallet, pound chicken to 1/4 inch thickness. spray skillet with Pam. Preheat over medium heat. Add chicken and cook until tender and no longer pink. Remove chicken and keep warm. Add mushrooms, green onion, water, and salt to skillet. Cook until mushrooms are tender and most of the liuid has evaporated. Add Marsala or cooking sherry to skillet. Heat through. Serve chicken topped with vegetables. |
I've been making chicken quesdillas alot lately. Chicken, peppers, black olives, tortillas, ff cheese, sour cream & salsa.
Or chicken teryaki: chicken, peppers, olives, teryaki sauce & brown rice. Both of the above are pretty much throw it in a pan and cook it things, as I am not such a great cook. What about grilled steak and baked potatoes? You can have beef twice a week and we do this every week. Last night I was going to make shrimp tacos, but I thought the shrimp smelled bad so I threw it out. Turns out it had expired :barf:, good call on my part. Weigh and count accordingly. |
Thanks ladies this really helps a lot! The Chicken barbeque Pitza sounds good! But I couldn't find it! See! That's why I had to post a thread. HA! I think we are going to go with Fajita's tonight? Thanks for all the suggestions! And hunting down recipes! Barb! HA! Thanks again!

Try a stir fry with brown rice! You can change up the veggies and meats so it is different every time.

I load everything up with stuff from the spice rack now that we have to watch our salt intake... Fresh, minced garlic also works wonders... We use ground turkey for just about everything these days and you really have to load it up with spices.. Italian blends work really well...
