LAWL cookbook , Jerk Chicken Recipe

  • I am making the LAWL Jerk Chicken Recipe tonight! I just thought I'd throw that out there b/c it is so stinkin' good. It is one of my favorite recipes in the cookbook. For anyone who hasn't tried it... you should. Even though it seems like a lot of ingredients, it is finished in a snap with a food processor. Sometimes it is good to hear which recipes are good ones on plan. The other one I make is the Tzatziki Sauce (or cucumber sauce) for chicken gyros with whole wheat pitas and reduced fat feta - YUM!

  • Jerk Chicken Recipe - Fabulous!
    BTW, here is the recipe. Just put all of these ingredients into a food processor. Once blended, marinate chicken in a freezer bag for 24 hours (or as long as you can). I serve with a vegetable and brown rice.

    Jerk Chicken Recipe

    5 green onions
    4 garlic cloves
    2 fresh Scotch Bonnet or Habenero peppers (I used Jalapenos)
    2 Tbsp Fresh Lime Juice
    2 Tbsp Fresh Lemon Juice
    3 Tbsp Olive Oil
    2 Tbsp Low Sodium Soy Sauce
    1 Tbsp Brown Sugar
    1 Tbsp Fresh Thyme Leaves
    2 tsp Ground Allspice
    2 tsp Freshly Ground Pepper
    3/4 tsp Freshly Grated Nutmeg
    1/8 tsp Cinnamon
    4 Boneless-Skinless Chicken Breasts
