Default Blueberry muffins??

My husband brought home some fresh blueberries and wants me to make blueberry muffins--a family favorite. Does anyone have a POP recipe for blueberry muffins? Or, am I going to just have to make them for the family and not have any myself?

I pulled this out of the cookbook. You should be able to modify with the blueberries and have your exchanges.

Oatmeal Applesauce Muffins-FSFa
¼ cup butter
½ cup Splenda Brown Sugar Blend for Baking
1 egg
1 cup flour
1 teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon baking soda
Dash salt
1 cup unsweetened applesauce
1 cup quick oats
½ cup raisins
¼ cup unsalted nuts

Cream butter and sugar blend. Add egg. Sift dry ingredients and add to mixture alternately with applesauce. Stir in oats, raisins and nuts. Pour into greased or paper lined muffin tins. Bake at 350°F for 25-30 minutes.

Makes: 12 servings, Serving size: 1 muffin

Here is another one

Whole Wheat Blueberry Muffins-SC
1/4 cup packed brown sugar
1/2 tsp. cinnamon
3/4 cup skim milk
2 Tbsp. vegetable oil
2 Tbsp. unsweetened applesauce
1/4 cup honey
1/4 cup egg substitute
1 cup flour
1 cup whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
1 cup blueberries

Heat oven to 400F. Spray muffin pan with nonstick cooking spray or line with paper cupcake liners. Mix brown sugar and cinnamon, set aside.
Beat milk, oil, honey, and egg whites in a large bowl.
Stir in flours, baking powder, and salt just until everything is moistened (will be lumpy). Fold in berries. Divide evenly among tins. Sprinkle with brown sugar mixture. Bake 20 minutes or until golden brown. Remove from pan immediately!

Makes: 12 muffins, Serving size: 1 muffin

Amy....good response. These look good.
Stephanie...I wished I had asked your question a few days ago. I made blueberry muffins and intended to just make them for the family. I got into them myself and it was not good. I'm usually POP, but those did me in! Good luck!
