Fiesta Chicken & Rice
Ingredients: 1 (10 3/4 oz.)can fat free reduced sodium cream of chicken soup 1 cup chunky salsa 1/2 cup water 1 (8 oz.) can no added salt whole kernel white shoe peg corn 1/2 cup uncooked Minute RiceŽ 8 (3 or 4 oz.)boneless and skinless chicken breasts, size according to plan 1/2 tsp. paprika 3/4 cup reduced fat shredded Mexican four-cheese Preparation: Mix soup, salsa, water, corn and rice in 2-qt. baking dish. Top with chicken and sprinkle with paprika. Bake in a preheated 375F oven for 45 minutes. Ten minutes before the chicken is done, remove from the oven and sprinkle with the cheese.
