Taco Baked Potatoes
LA Exchange: 1P, 1S, 2V, 1/2D (opt. condiments)

1/2 small baked potato
6 oz. ground turkey (seasoned like taco meat)
1 chopped tomato
1 c. chopped lettuce (1/3 veg)
3 chopped green onions (about 2/3 veg)
1 oz. light cheese
Optional: sour cream, salsa

Directions on this should be self explanitory.

We used to make this all of the time pre-diet and I figured it would work pretty well on plan too!! YUMMY STUFF!!
