Tuna with Mango Salsa
Ingredients:
4 (4 or 6-oz.) tuna steaks, 1 inch thick
3/4 tsp. ground coriander
1/8 tsp. ground cayenne pepper
1 mango, seeded and cut into 1/2-inch cubes
4 slender scallions cut diagonally inch 1/4 inch rounds
1/4 cup packed cilantro
2 Tbsp. seasoned rice vinegar
1/2 tsp. Asian sesame oil
Preparation:
Set oven rack 4 to 6 inches from broiler and turn on broiler. Seasons both sides of tuna with coriander and cayenne; place on broiler pan.
Broil 5 minutes on each side or until tuna is pale pink in center.
Stir together mango, scallions, cilantro, vinegar, sesame oil.
Transfer tuna to serving plates, top with mango salsa and serve.
