Pizza Meatloaf Recipe

Ingredients:

1 1/4 or 1 3/4 lb. lean skinless ground turkey breast , size according to plan
3/4 cup no added salt spaghetti sauce
1/4 cup part skim mozzarella cheese
1/2 cup chopped green peppers
1/4 cup minced onion

Preparation:

Lightly coat a (9-inch) pie plate with cooking spray. Pat turkey into pie plate.
Bake as follows:

Conventional Method
Place turkey in 350° F oven; bake until turkey no longer remains pink, about 17 to 20 minutes

Microwave Method
Cover turkey with waxed paper.
Cook on high; rotate plate 1/4 turn after 3 minutes.
Cook until turkey no longer remains pink, about 5 more minutes. Drain.

Top baked turkey with spaghetti sauce, cheese, and vegetables.
Return turkey to either the conventional oven or the microwave oven and heat until cheese is melted, about 1 to 2 minutes.

Makes: 4 servings
Serving size: 1/4th recipe

DS (15 months old) and I ate this for dinner last night along with some grilled zucchini. I used fewer peppers and onions than it called for and counted as 1P 1V and added a second V with my zucchini.

I also substituted no salt tomato sauce and added garlic and onion powder, basil and oregano for the no salt spaghetti sauce. It was yummy!

You could use the beef, but since the LAWL plan discourages using beef too often, it's just easier to use the ground turkey...

Now where can I get no salt tomato/spaghetti sauce???

Dan- Check at a local health food store. The one I get is by Walnut Acres. It's an organic pasta sauce. The label says low sodium, fat free, tomato and basil pasta sauce. I just add a little bit of mortons lite salt to it and it is premo yummy.

Serving size is 1/2 c., 40 cal., 20 mg sodium, 9 carbs, 7 g sugar and 2 g protein.

Website is - walnutacres.com and it's made in Boulder, CO- You could pick up a couple cases when you go to your Rush concert.
