Hi ladies,

Sounds like everyone is on a roll getting the fiber in. My stats today are

Cal 1,087
Fat 31
Carbs 161
Fiber 45
Protein 57

How does that look? I never really take time to do a good scutinizing of how balanced it should be.

My husband, a type 1 diabetic always wants someting sweet in the evening. I just made him a "parfait," which he loves. Frozen cheeries, blackberries, strawberries thawed out. A big scoop of non fat organic vanilla yogurt, a sprinking of flax, a sprinking of Fiber One (he told me he will not eat that - ha - he ate it and liked it) and crushed walnuts on top. Oh, and the treat... a tablespoon of dark chocolate ghiadelli chips sprinked on top.

So, you can see my mission has expanded to not just my own fiber intake but my husband's as well. If left to his own devices, his daily fiber would be about a 2!!

Anyway, I'm getting loopy and ready for bed. I'll check back tomorrow.

You can always add fiber to your shakes. I often mix psyllium husk powder with protein powder. I'm pretty interested in the bars because DH and I go hiking and I often take bars with me. I'm going to try to hide the bars and shakes from DH though because he always likes what I buy! And if it becomes a favorite of his, then I'll have to keep buying them.

Your body gets used to the extra fiber intake eventually. (very TMI) I actually used to be pretty gassy, for some reason, it is a lot less now than ever. I think just general healthy eating helps.

Thank you. I feel really puffy today but I keep reminding myself that it is bloating that will go away after my body adjusts. Right now I need to stay off the scale because I feel like I have gained 5-10 pounds.

I wanted to eat the fiber one bar before I went so the yummy foods there wouldn't be as tempting. I didn't eat much but I did have a few "naughty" foods. I have not counted yet but I am pretty sure my fiber is low.

I wanted to share a pretty good snack with everyone.

If you mix 1/2 cup of cottage cheese, some pumpkin pie spice and 1/2 cup of pumpkin puree, it is pretty filling but it also has 3.5 g of fiber due to the pumpkin. If you mix in flax seeds or other fiber, you could up it a bit but I enjoy it as it is.
