Crock pot cream of mushroom soup

  • 1 T butter
    1 onion, chopped
    2 cloves of garlic, pressed
    1 lb of mushrooms, sliced
    3 cups of low sodium chicken broth
    1 cup fat free half and half

    In a skillet, heat butter over medium heat, saute onion and garlic till onion is transluscent, add mushrooms and cook until mushrooms are well wilted and browned, about 10 minutes. Dump this into a crock pot and add chicken broth. Cook on low heat setting for 5-7 hours. Add half and half during the last hour and serve nice and hot.

  • Oh, sorry, I forgot that part. The recipe serves 4. Not sure on the serving size, just 1/4 I guess. I also wanted to add that it needs salt and pepper.
