Also, I'm with you regarding taking the easy way and cooking for two. What I've finally figured out is that it makes life a LOT easier to cook a big batch of something healthy, then freeze in individual portions. There's almost always something quick and easy waiting in the freezer, so I don't even think about getting fast food.
And I have also grown seriously attached to Morningstar Farms "fake" burgers and chicken patties. Even my husband likes them (and he is a major carnivore!) They are very fast and easy. It doesn't have to be a chore every single day. I like to cook in bigger batches one day a week, then freeze. Then all you have to do is heat up some veggies separately. Or better yet, make sure there are already a bunch of veggies in the pre-made dinners!
