Former Vegan Enjoying Food Too Much

I'm 21 and new to the site. I was a vegan throughout middle school and high school and did pretty well because I had access to a lot of good vegan food and was involved in a lot of sports. I stayed about 120-125 lbs until college. Once I went off to college, I had very few food options and wound up really sick and dropped down to 110, which was rather sickly looking on my 5'8" large frame. So I gave up and began eating "normal" food. So in the past 4 years of eating meat and dairy and enjoying myself too much, I've gained over 50 lbs.

I'm currently a graduate student and barely have time to do anything anymore--so exercise time has gone out the window. To top it all off I live with my fiance who is short, skinny, and can eat whatever he wants without gaining an ounce. I've been trying to get him to exercise with me, because I hate doing it alone, but he doesn't see the need.

Any easy exercises/eating plans that are good for a beginner who is very out of shape? Something easy to stick to an doesn't require too much time? I'm desperate to lose about 40 pounds.
