@lisa32989, I'm glad to hear they've lowered their claims. I can do 2lbs/week most weeks, but I don't remember seeing 3 much after the first month, last time.

(Admittedly, I cheated in minor ways--occasional cheese, occasional bratwursts--so it's also unsurprising that I didn't hit 3 much. I'm doing 100% OP this time, with the exception of a friend's wedding in September, so I am hoping for more 2-3 pound weeks and fewer 0-1 pound weeks. )

Today was the first time I have ever had Jicama. I made them into fries but couldn't get them really crispy. does anyone have any suggestions to get them really crispy?

I would be curious to know if there are any real tricks to that too - loved the taste of the jicama fries but I also like them REALLY crunchy - the zucchini chips help when I need good crunch.

The thing about making fries from non-starchy veggies like jicama, turnips, rutabaga, is the starch helps potatoes crisp up. Even then, oven "fried" potatoes don't get as crisp as deep fried do.

You can get some browning and crispness around the edges but, for the most part, they won't be as crisp as a deep fried french fry.

Thanks lisa. I tried broiling them in the end of their cooking time and that helped with browning.
