I'm feeling pretty incredible. Nearly 23 lbs in 6 weeks. This diet works. Even on days when I'm feeling discouraged and the scale stalls and it seems like it can't possibly be working, then suddenly it all clicks and I've lost a few more pounds. I'm delighted. Funny you mentioned that because I JUST realized last night that for the first time in months my joints don't hurt!! my legs used to ache at night, my shoulder always bothered me, and my lower back. I feel wonderful!! I do still get a little sleepy around 3pm, but i've been like that all my life!! Siesta time!!

This is a wonderful feeling isn't it?? And REMEMBER< you don't want to mess it up while you are on vaca!! :dizzy:

NSV today...get to purge my closet of my size 14 pants!!!! Not a selfie-girl but changed my avatars today wearing my infamous orange shirt...it helps me see the difference after 20 lbs. I am so thankful for all the good energy around here....keep strong, everyone!

Jemma~ Awe thank you so much for that ;) I love rhubarb raw too, I peel it and sprinkle with pink sea salt and munch away...so yummy! I am going to try the recent recipes too though I bet they are wonderful! Stick to your guns this weekend, you can do it! Weekends are very hard for me as well. Hubby and I are very social and do a lot with our friends. Dinner, dancing, movies, heading to Cali for weekend getaways etc....we have to learn how to go on with our lives and still take care of ourselves and be healthy! We can do it! I'm hoping soon it will become second nature and we won't have to think so much about it.

Kelly~ Thanks for you support girly! LOL, I love that motto...nothing tastes as good as being skinny feels! I haven't been skinny in so many years I can't remember how it feels! But I am certain it feels better than dessert tastes! :) Oh, and here's to our painless joints! Whoohoo! We are empowered!!

LOL... although some of us have been "hiding" for years (I dare you to find a picture of me for the past few years-- not too many around-- sad for me)

Your boyfriend loves you and will love that you're making these changes to be a healthier sexier you. Just be honest and tell him how hard the temptations are and maybe make some changes for the "going out" plans for a bit -- a romantic picnic where you bring the food would be "different", or have him "stay in" and make a romantic dinner at home. These things you can control better. When he sees that your new way of eating is not weird but healthy and delicious (and saved him a ton o' cash!) you may be resetting HIS mindset too about what a "date" has to be. Believe me, in the long run if this works out for you two, you won't have the money to be eating out all the time as you'll be saving $$ for trips, a home, baby stuff... May as well start now learning to enjoy each other "in" instead of "going out" :)

Also sending lots of strength to those facing challenging weekends. Hang in there, check in here with us when you need to.

Had a good weigh-in this morning. Down 3.8 for a total of 41.2! Lost some inches, too, which is nice. Heaven knows there are plenty to be lost, lol. I'm thrilled to have hit the 40 pound mark and have 50 in my sights next! Then we will work on getting under 300. Baby steps!

Hi,

I just slice it like celery into little half moon chunks and put into a pan with a couple tablespoons of water. I have been adding a couple tablespoons of Walden Farms jelly (strawberry or cranberry) which both gives it plenty if sweetness AND thickens it. Before I thought of adding the WF I used to add Splenda (or you can add approved sweetener of choice) I also add cinnamon and clove to amp up the flavor!

Cook it until them chunks are broken down and mostly stewed. If you add the WF jelly, when it fools it takes on a bit if a jelly like thickness.

Congrats to all for the IP victories + safe travels to all! I just did my Friday WI for 2nd week and am down 2 lbs for a total of 9.8 !! Haven't been able to check in b/c life has been hectic and stressful, but IP has been constant and I'm thankful to not be using food as a crutch which also affected my inflammation, etc... Loving all the good energy -- thanks guys -- have a beautiful weekend!

I mentioned that I tried some by cooking the rhubarb to soften then putting in a gelatin pack. I didn't use an IP one but just the 10cal diet one but you could use the IP one and if you used an oatmeal pack for the crumble, just put into 2 servings to still be one pack. The gelatin also gave it some sweetness and thickness

I like to cook rhubarb in the microwave and then pour the vanilla pudding over the top and let it set up - so good for a quick way to get my veggies in and tastes awesome.

Ruth Ann - This sounds great!!!! I am headed out to my Mom and Dad's today and they have rhubarb in their garden. I am going to make it like you suggested!!!
