I divide my ground beef into eight ounce burgers and freeze individually. I throw them on the bbq frozen the grill pan just as if I bought a premade. Cooks just the same in about 10 minutes. I'm sure it would work with ground turkey/chicken too. You could precook a bunch too and just micro to heat but as you said, cooking in bulk doesn't always happen.
Sometimes I do get on a roll for prep.
I pre-roast my peppers and freeze into 2 cup raw equivalents. (Did this when I overbought peppers and they were starting to shrivel so I wouldn't eat them raw) I can throw them in a pan to reheat in minutes. I precook my rutabaga too in chunks and freeze in portioned bags. Microwave and purée as needed. I even have parboiled rutabaga frozen fries ready to go when the kids have French fries. These are all my go to's on the busy nights.
