Suggestion: Pork loin roasted studded with cloves, glazed with WF jelly if you like that sort of thing, slow roasted veggies (not root, lol), IP rotini salad - there's a recipe online somewhere. Crudites for appies. Do an IP mock apple crisp using zucchini and Maple Oatmeal packet for dessert - Chef Daniel Verati does this one up. Check out his Facebook page - he posts IP recipes all the time. He had a great Thanksgiving/Christmas one at the end of last year.

When I started IP, in my head I was like "on Easter I will have whatever I want." However, I really do not want to blow it, and having two events the week after where I have to dress up (I am planning to wear a Juicy Couture Mini dress on Saturday to a concert!), there is no way I am blowing it. With my coach I came up with a bit of a game plan. I can have the protein and veggies until full, but lay off all the forbidden foods and drink. That is exactly what I am planning to do. We have ham and eggs for breakfast before we go to church (that is our Croatian tradition) and we will be having a late lunch of bbq. I am so having that steak! Our parents are little miffed that we are not making roasted lamb, as it is also a Croatian tradition for Easter, but since I cannot eat lamb, it is not happening.

My husband is doing 14 pounds of beef brisket on our new smoker/grill for our Easter. I am also baking a ham as a back-up plan. (First time using the new smoker).
The rest of the dinner for me is grilled asparagus and salad. The other stuff doesn't bother me since I love what I am getting so much. They can have the potato salad, baked beans, garlic bread, pies, etc. and I'll be fine. Hope everyone has a wonderful Easter celebration with family and the weather behaves. I have 350 Easter eggs to hide for the teenage grandkids. |

Talked to my coach today and he said that a few extra Easter eggs won't hurt me as long as I don't have wine or sweets that I can have a P2 day lol. I guess it's a little leeway

Sounds like everyone has good plans! I'll be traveling to a funeral Easter evening so we're skipping Easter dinner this year although dh said he may have a ham sandwich!

We're having friends over. They know about my plan so we've decided on steaks, grilled veggies, and cucumber salad.
They may bring a pie for the people not on plan and I'll save my restricted for dessert. |
Just found a recipe for maple Dijon glazed pork loin. I'm hoping it will work with WF syrup??? I'll make potatoes for everyone one else but will do caulimash for me and probably asparagus.
I'm surprised that I don't feel at all tempted by the Easter treats that the kids will have. They will be theirs and I have never been one to raid their stash, even at Halloween. Just saw a neat dessert where you mix the mango drink with the raspberry gelatin for a layered dessert. Might try that. |
I'll be having ham (no glaze), green beans, and salad. Question about the ham- since it's already cooked, should I have 6 oz or 8?
