crockpot balsamic chicken

  • Hey guys. Made an awesome balsamic chicken in the crockpot and thought i would share. I'm always looking for crockpot recipes when I am on the go so I adapted a baked chicken recipe a bit and it came out great!

    Balsamic Bruschetta Crockpot Chicken

    4/5 chicken breasts
    2 heaping spoonful’s of chopped garlic
    olive oil
    ¼- ½ cup of wf balsamic vinaigrette
    ¼- ½ cup water
    2 packages sliced mushrooms
    3-4 diced Roma tomatoes
    Dried Basil
    Dried Parsley
    Dried Chives
    Dried minced onion/ Onion powder
    Pepper
    Olive Oil

    Sautee sliced mushrooms on the stove in a little bit of olive oil until browned. Place chicken in crockpot, add sliced mushrooms.

    In a bowl mix together diced tomatoes, garlic, some olive oil, balsamic dressing, water, and seasonings to taste. Pour over chicken.

    Cook for 4-6 hours in slow cooker.

    Once chicken is slightly tender take out a few cups of broth and reduce in sauté pan on high heat until it bubbles and thickens. Pour over chicken and Enjoy!
  • I'm not sure which phase you're on, but I'm 99.9% sure we cannot have balsamic vinegar on any phases until maintenance. Someone please correct me if I am mistaken!
  • It is my understanding too that balsamic vinegar is not allowed - it says so right on the P1 sheet.

    The balsamic vinaigrette? I'm going to assume that is fine since the nutrition stats look right.

    BUT it peaked my curiosity since it says it contains balsamic vinegar, which has around 2g of carbs per tablespoon. So exactly how did they put in the balsamic vinegar and still have no carbs? The vinegar is the 2nd ingredient on the WF product. I'm not saying it's not okay to use the WF, but I'm puzzled how they did that!

    As long as it is less than 1 carb per serving, they can call it zero

    I know Lisa, but it seems strange to me that it would be so high on the ingredient list and still have the 0 carbs. They must just not put very much in!
