Thank you, Yespositively! I changed it a little, I shredded all the zucchini in the food processor and then sautéed it. Followed all of your directions but I did not purée it after cooking because I miss some substance in my food. I pretended the zucchini shreds were noodles.

Sounds good that way too! I'm not a big fan of zucchini so I puréed it to make it more palatable. Whatever works!
I know we all have supporters and non-supporters and it's just tough to be around someone who isn't necessarily helping or cheering you on. I'm just glad to be home with my cousin who supports me 100%. We had a big birthday celebration in the family last night and it was nice to show up and have IP chicken and our own salad on the side while everyone else chowed down. Excited to see what happens this week and the rest of my Christmas challenge!
I went thru the same type situation yesterday so I feel for you fellow IP'r. My hubby and I went to the city so that we could do some shopping at Costco and I made sure that I was mentally ready for the challenge. We ate lunch just before we left home and I left the house with a tea and a 1L bottle of water for the trip (1 1/2 hrs). We went shopping as soon as we arrived in the city so that we would be at my sisters house well before supper.
It was all prior to our trip that forced me to keep my mental challenge of keeping my mind OP.
My sister is OP as well, but she has been on and off almost weekly for about 6 months. I called her the day before to see what she needed me to bring for supper and she said that she was putting a roast in the crock pot for us. Since my hubby isn't dieting and doesn't get to eat at the good burger joints much, he was excited to eat out and I let my sister know that he wanted her hubby to jion him. Immediately she was like, OK...we will all go. I said that we could let them go and we could eat at home so that we stay OP. She said that we could go with them but just eat the burger with the toppings and not the bun.....and that was what she did just that day when her and her hubby were in town.
We (sister and me) did eat at home and let the boys go out....but I think that she was a bit pissed at me.
And something else...the day I started OP (9 Nov) she texted me a picture of a dish of french french fries with cheese curds (real!) and gravy topped off with pulled pork. She knew that I had started my diet...........sabotage anyone?
Aw I'm sorry he has food allergies. DH will eat anything and is a pretty good sport. I picked him up some buffalo chicken for this Thursday so that he can have more of an indulgence while I'm at school (he eats like 3x as much as I do and struggles to keep weight on!).
Some simple dinner ideas:
-turkey chili in the crock pot (use peppers as veggies, no beans, uses your tomato allowance for the week)
-lean pork chops as a break from chicken
-Indian seasonings like curry. I am making curry tonight and will use NF chicken stock in the sauce. I'm planning to add onions at the last minute so they are warmed a tiny bit but not caramelized (is this a cheat? not sure! but I can't eat them straight up raw).
-grilled chicken with a yummy rub, chop it up for tacos. tacos for him, taco salad on romaine for you. Use a little fresh salsa as your dressing.
-marinate pork tenderloin in a chili-garlic sauce (Asian section of grocery) and some soy sauce and crushed garlic and rosemary. Grill it up and serve with any veggie.
I find if I chop up some cooked chicken and season it a few ways, I am less bored.
To combat fatigue with the IP products, I like blending the drinks with ice or letting them freeze (chocolate pudding) for texture variety. I made the blueberry cran granita into a jello with unflavored gelatine and was pretty happy with the results. It calms the sweetness and you get to "eat" it. Plus it's not enormously time consuming.
I do well with batch cooking-- we are pretty good leftovers eaters, so generally eat the same thing 2-3 times. My goal this week is to sneak a little fish in there-- I'm thinking tilapia with a little lime squeeze and cilantro. Tilapia is a nice skinny fish and will cook up in the pan in olive oil in the time it takes you to toss a salad.

Sweetie is allergic to Fowl so Chicken and Turkey are out for him. Curry spices are out due to sensitive stomach. Cauliflower, most lettuces, peaches, bananas, legumes, and several other veggies cause him distress. He eats a lot of red meat and pork. I'm not a huge fan of pork, due to overage usage growing up. (farmer kid and pork stretched well)
nolasmurf What challenging allergies! I hope he watches his cholesterol. You might do well to buy a rotisserie chicken for yourself and eat that meat if you're feeling busy for the week. I enjoy pork tenderloin and chops-- I like sausage products, too, but only in moderation.

I believe I can make it through the day without breaking the protocol *much* but I'm struggling with wanting to not feel cheated out of a holiday. Even as I write this, I realize how pathetic it sounds - grrrr!! Any encouraging words?

Please take this question in the spirit in which it is intended, but why did you start IP knowing the holidays were coming up? My guess is there is something you want MORE than a traditional holiday dinner. (We all want something more, that's why we are here!) Give yourself a gift that is so much more than one dinner- the gift of willpower, control, health, and everything else you are getting from IP.
There will be more dinners, more holidays where you can partake with fewer restrictions (although in moderation- we don't want to end up back where we started!). Look forward to how you will SHINE on New Year's, or Easter, or July 4th, or next Thanksgiving...and beyond!
Don't LET yourself feel "cheated out of a holiday". IP is a choice you made for very personal reasons. Own that choice, work it, represent it, and be proud of it and of yourself. Have some turkey, some veggies, and a TON of gratitude and love for your blessings and those around you. It is one day. You can SO do it!

I've been adding a tsp of olive oil, salt and pepper to mine. Been loving it. Makes a nice "sauce" for the meat that I'm getting a bit tired of.
