So I have been trying different methods of getting my veggies in and I love the spinach blended with my chocolate shake. In my poor attempt at creativity, I thought I would blend the spinach up with my omelet. I felt like I was in a Dr. Suess book. Green eggs and ham. Still tasted fine but definitely green! I am so glad no one was around to see me chow down on that dish! Lol:dizzy:

LOL - I assume you didn't saute the spinach down a little? I can imagine just tossing the raw spinach in would be very, very green!

Yea no sauté. Just nice fresh green spinach. I should have taken a picture! I wanted to eat in a dark room so I couldn't see it!

I love spinach omelets! Perhaps not blended, tho ;)

that would have been a great picture :D you should have taken it. you could have called it "Maxxy's St.Paddy Day's Eggs" and added it to the recipe thread lolol :D

Eggs tasted fine. They just didn't look pretty !
