Veggie trouble!
 
I am having serious veggie issues. I can't get them down. I eat broccoli, cauliflower, peppers, mushrooms, kohlrabi, radishes, celery, cucumbers, cabbage and I am sick of them all. I am 22 days into IP, I've lost 12 lbs, not great but I have dropped a size but I am so tired of veggies. I have tried cooked, raw, plain, seasoned etc etc.

I hope this is a temporary thing and it will pass but I don't think I am getting my 4 cups in.

Any suggestions! Guess I am having a down day....not bad enough to cheat by any means but sure not motivated!:(

I like making my salad with baby spinach instead of lettuce. And I like to eat pickles! Feels like a cheat to me. :)

Try sprucing up your veggies with different OP seasonings (garlic, most clubhouse spices, etc). Keeps it interesting.

PS. a 12 lb loss is amazing!! You should be proud of yourself!

Have you tried roasting them or grilling them? It brings out their natural sweetness. Or look up the veggie purer thread and add them to Chili, soup, omlettes, etc. And your 4 cups is pre-cooked. Good luck!

I haven't tried grilling. That's a great idea. I also will give spinach a try in my shakes. I'm not hungry at all which is good.

I am proud of my loss so far. It's what's keeping me going and not cracking! That and my pants are too big!!

Have you tried rutabaga? It's my "potato" fix! So good cut up like french fries and grilled, roasted in the oven or even in a pan. It's an occasional veggie but a nice break for me! I too like most of my veggies roasted in the oven.

I did roasted asparagus and I quite liked it. I will try the rutabaga. When you add spinach to a shake, is it fresh or frozen? What do u do?

2 cups of cauliflower with just enough of your preferred broth/stock to cover cooked until very soft, add raw or very lightly cooked onions and roasted garlic then pureed until creamy/smooth- great as a potato chowder/soup especially with some broccoli and chicken in it! I love it!

I heard that you can make mashed "potatoes" outta cauliflower, try that with a bit of your preferred broth, garlic and salt/pepper. I also have read that you can do that with radishes also??? Never have tried, bit scared to, lol.

I don't know if you use packets or shakes, etc but you could always add spinach to them as another way to get in your veggies. ETA: I use whatever's on sale (fresh or frozen) re: spinach and I use approx. 1-2 cups, depending on the size of the drink itself.

You're doing great! Just keep at it! :)

Raw. Fresh. Just purée it right in the blender with your shake.

Roasted turnip fries covered in seasoning are legendary. I cut them up into size of chunky french fries - zap them in the microwave for 5 mins, dry them then cover them in seasoning and roast them with my olive oil. Yummy.

I braised a flank steak for a few hours over a bed of leeks, zucchini and turnip (tyme, pepper and salt seasoning). After the steak was really tender (aprox 3 hours) i put all the juice from the tray and the veggies in a blender and whizzed it up and it made a really yummy gravy to put on the meat.

Rhubarb also counts as veggies - if you eat it raw it is very bitter but if you stew it for a while and add sweetener it is lovely and more like fruit then vegetables

One of my favorite way to eat rhubarb is raw, sprinkled with sweetener, usually Splenda. It's crunchy like celery, but tastes sort of like sweet tarts or pixie sticks. I've never had bitter rhubarb, but it is sour. Some is very, very sour, but I bought a bundle this week from the farmers market that isn't very sour. I've been eating it without sweetener, and loving it.

I also sometimes throw some raw rhubarb into the blender with diet lemonade and ice.

If you like sour candies, you may like raw rhubarb.



I also love mashed cauliflower and last night mixed a cup of garlic mashed cauliflower (2 cups raw cauliflower) into my own version of the potato puree packet (18g microfiltered whey protein isolate powder and 10g mashed potato flakes and seasoned to taste with allowed seasonings).

I sautee zucchini, mushrooms, and celery and add it to any of the IP soups. Also roasted cauliflower and asparagus is very yummy!

I have made the rhubarb crisp with the oatmeal. It's my new favourite. Today was a better veggie day. Thanks for the suggestions. Keep 'em comin!

You can roast the whole head, or break it into chunks. I prefer chunks. Place on a cookie sheet or in a shallow pan. If you want, you can use your oil alottment and drizzle it on the pieces, or rub it on the whole head if you decide to roast the head whole. You can also shake the pieces with the oil in a ziploc bag with seasonings and shake to coat.

Bake at 400 - 470 degrees. I like to roast at 400 for potatoes, 450 for most other veggies, and 470 for high water veggies. You do have to keep a very close eye and nose at the higher heats, so 400 allows you more leeway.

yah i usually do 1/2 a head of it...plop it in a bowl add my spices, some oil, place on cookie sheet...425 for 20-22 mins..and bam-o.! deliciousness... i do this same thing with mushrooms, asparagus (makes your urine real stinky)....broccoli, anything really....i love veggies tho, so raw, cooked..i dunno...this procress brings them to a level a never knew existed (mostly because while i ate alot of raw veggies/steamed veggies, getting creative is what most of the pro's here suggested. Check out all the recipe threads and blogs...they all have amazing ideas, and ways of making everything look AMAZING. i just wish i had the cooking skills that some of them possess).

another easy, fast way to get veggies in...puree them into a soup mix (steer clear of the chicken noodle imho its off...the plain chicken is yumo tho, as is the broccoli-cheddar)....this was an idea i got from Lisa32989... its been a life changer.

Just cut it into bite size pieces. I use a mist of EVOO spray and garlic salt & pepper. Roast it at about 375 degrees for 20 minutes. Check it, you may need to turn the pieces. Then roast it for another 5-10 minutes, depending.

Also, I have found that I like using cauliflower as rice. Grate it in a food processor. Then I saute that with curry powder and a small amount of chicken broth (OP of course). It makes a curried-rice side that's great.

I too get tired of veggies the same old ways. When I am craving something fruity I make Mock Applesauce with zucchini. I haven't seen a recipe for that in the threads around here but I modified one off of Cooks.com

Peel & Quarter one medium zucchini add into a blender until mushy
Put the mash into a sauce pan with 1/8 cup vinegar (I use apple cider vinegar) Add cinnamon and sweetener to taste (I use stevia in the raw or truvia)
Heat in sauce pan until boiling, boil for five minutes.

Usually the zucchini equals two cups so I get usually eat half and save half for the next day. Easy way to get a cup of veggies in.

new here so im not sure if this recipe has been posted yet but my coach told me about cauliflower rice... take cauliflower and either grate it with a cheese grater or do it in your food processor ( a lot faster this way). Then cook the grated cauliflower with lots of seasonings and a bit of EVOO until browned. I like to serve it with stir fried beef or eat it alone with frank red hot buffalo sauce... it really feels like you are eating rice but i actually like the taste of this better! You can change up the seasoning you use depending on what you will be serving it with, sometimes I use soy sauce or ill just use lots of Italian seasonings. Enjoy :carrot:

In my opinion, boiling creates a much stronger smell than sauteeing or roasting, but I've never found a completely odor-free way of cooking cabbage.

I took a peek at your blog, (kaplods spa style weight loss) wow, what a cat story!! I have a big kitty, too, and it is nearly impossible to get the weight off. I even took him to an acupuncturist/nutritionist vet for a diet recommendation. (Not for acupuncture) He loved the diet she put him on, some of it homemade. Anyway, he loved it so much that he pestered me day and night for more. So, in the end, it turned out to not be "livable". Plus, he actually didn't lose any weight. He only gets 1/2 cup of cat food a day, not much for a large cat.

I apologize for digressing from the topic. But for anyone who loves cats, this is a MUST read!
