Hi Everyone,

I've been on the program since January, using alternatives since March, and am really, really bored with the green veggies I like. I roast zucchini, asparagus, and broccoli in the oven and use cauliflower like rice.

I wondered, what other veg products have you found to help alleviate the boredom?

I'll start. I found a bagged mix at Trader Joe's over the weekend that I LOVE! It is an organic mix of baby kale, baby chard, and baby spinach. I'm having is as a salad this week.

Rutabaga as french fries has been a life saver when I need something different. Also roasted red peppers have been my go to. There's a really good broccoli, kale, and brussel sprout mix at Costco that I love. I just recently tried the little cocktail cucumbers also. They're pretty good.

I stir fry veggies (any combo of celery bell peppers, bok choy, green onions, mushrooms, broccoli slaw, bean sprouts)

Kale chips!

Marinated cucumber & onion salad (ACV, Splenda & water)

Cole slaw (bagged w/WF dressing)

Caulirice or mashed cauliflower (OMG: I buy SO.MUCH cauliflower!)

Mockamole (made w/ asparagus...see recipe #4 thread). Dip bell peppers, jicama, or cukes. Or just put on top of taco salad.

I include 2 cups of spinach with my ip choc drink + ice in the blender in the morning.

I just ate the mockamole for dinner on fajitas wrapped in lettuce leaves - WOW!! Truly delicious. I am a guacamole junky and was shocked at how close the taste was once I added it to the fajitas.

i wouldn't survive without really good dill pickles. I get mine homemade at the farmers market. I also just bought a jar of pickled asparagus and tonight im having pork chops with vinegar peppers - pepperoncini and hot cherry peppers.

This is on my must try list. just need to find a good sugar free taco seasoning.

My latest fav is cabbage, of all things. I had this when I ate out a few weeks back, and it was my favorite thing on the plate.

I buy the Angel Hair shredded cabbage in the bag. I measure out 2 cups and put it into a skillet that is warmed up with a bit of oil added. I salt very well or use the Bragg's Aminos. Seasoning is the key to this. Sometimes I put a splash of Worchestershire instead of the aminos, maybe some hot paprika . . . do it up. I push it around the pan for a couple of minutes, until it is wilted and just a bit translucent. It only takes a minute or two. I like this hot or cold, but most people would probably prefer it hot. Yum! It's almost like rice noodles. (Sometimes it is nice to have something to twirl around your fork, ya know?) If I need to make up a little protein, as I did tonight, I crack an egg and scramble it around just as the cabbage is getting there. Tastes like fried rice. LOVING this!

Pretty basic. I think I got mine at Aldi

I love Aldi's! I fell in love my one and only trip. I need to get back to St. Louis for so so many reasons!
