A1 Texan's rhubarb crisp:

2T Stevia (in the raw)
2T cinnamon
1T vanilla
16oz bag frozen rhubarb

Heat on stove top til all is tender, then pour into a casserole dish
and add Proti-diet Maple brown sugar instant oatmeal on top and spray with olive oil I Can't believe it's not butter spray

Put in oven at 400 for 25 min.


The only thing I did different was I used fresh rhubarb and IP maple oatmeal. I had a question about how much liquid to add to the oatmeal and I added enough just to make it moist, although maybe I didn't need to? I'm not sure about that, never made rhubarb crisp before, maybe the moist rhubarb would have soaked in to the oatmeal? At any rate, it was excellent!

Today I had an iced brewed coffee from Starbucks with sf cinnamon dolce and added my vanilla rtd (snack) let me just say YUM! For any of you coffee lovers out there looking for an occasional treat, this is great!

Anyone on phase 3 finding themselves famished? I've been on for a week and today especially I'm just so so hungry. I am shocked given how much I'm eating for breakfast, but it's a serious hunger!!

I hear you! I was making my rotini and spaghetti for the rest of the family tonight and was asking my 3.5yo to taste the pasta if it is done (not that she'd know the difference on al dente but my hubby didn't want to be the tester!). So far I haven't run into too many other things that I have to get them to test.
