I made a salad very similar to this on Sunday afternoon -- used sliced cucumbers, no oil, just vinegar and some stevia with a bit of celery seed mixed in. Refreshing? Very.

Trick is to lightly salt the sliced cucumber and onion and let them sit for an hour or two. Then drain the water. Then add the dressing. Yum!

I did a very similar cold julienned cucumber salad. Added red peppers and red onion and the juice from my no sugar added pickles. added a few drops of sesame oil and grated ginger. Really tasty and a great way to use the juice after the pickles were gone!

LOVE zucchini noodles- they have saved me many a time when I was craving something naughty or gooey. I eat them alot as a late afternoon snack. I use a regular box grater from IKEA and it works fine.

Can't wait to try the cucumber salad next, thanks!

What is the difference between using zucchini noodles as opposed to using spaghetti squash? Is the texture different?

We can't eat spaghetti squash until P4 so we improvise!

But, yes, the texture is different. The zucchini noodles are wider and more firm than the spaghetti squash.

I am not on IP, but the thread caught my eye as I am looking for healthier, veggie alternatives as a base for dinner. How many of you prefer zucchini noodles over spaghetti squash?

IP doesn't allow spaghetti squash until phase 4. That us why we eat zucchini noodles instead.

I have made them with chicken and made an olive oil/lemon/garlic sauce for them! Yum!

I prefer them to spaghetti squash - I think they have better texture and flavor.

I just bought a spiral slicer on-line. I can't wait to try the zucchini noodles. Thanks for the info in this thread. I am also upgrading my mandolin. The one that I currently have only cuts thin slices, even on the wide setting.

Default Macaroons...need a sub for coconut in recipe..

Has anyone ever tried zuchinni or another vegetable in cookies...like macaroons? I've been looking at some recipes for macaroons that use splenda or aguave...and it seems the bulk of the calories left in the recipe come from the coconut shreds...any idea on what might work as an alternative?

65x65: I love the recipes on this site that add zucchini to banana "muffins" with the banana pudding, so I am sure it would work with macaroons. You could even douse them with some coconut extract and get a similar taste?

MMM..Yes...I was thinking about adding the extract too...

I just finished a book where the main character baked cookies...( no really literally baked cookies...) to relieve stress. One of the things mentioned that made me miss some kind of treat was macaroons and since they are mostly egg white and are GF which is a necessity for me......I was thinking THAT as a treat might have possibilities...!!
