Cauliflower Tots Recipe Help
 

Hi all,
I have been making lots of things from Rainbow's Recipe book with success. However, I have tried the cauliflower tots twice now and they turned into puddles of mush that didn't bake into tots like the pic. What am I doing wrong? Anyone perfected this recipe that can help me?!

I made them a long time ago and they were good. Here's what I remember.

I grated my califlower in the food processor and it was the small holed grater attachment. I squeezed my califlower first.

I cooked them in non stick regular size cupcake tins which I sprayed with oil first.

I put 1/4 cup of the batter in each section.

I cooked them a long time - right before they were burned I took them out and they were brown and crunchy.

Has anyone ever tried making these using cauliflower combined with the IP potato packet? I was planning to use it to make zucchini/potato pancakes, but cauliflower potato tots sound interesting don't you think?

Search for MIXIN IN THE KITCHEN. Rainbow has put together many Volumes; I think she's on Vol. 4. It's in one of them.
