I am on week 3 and the first few days were rough. I was SO skeptical that it would get easier. No other diet I had ever been on had ever gotten "easier" as time went on. What has worked for me is trying all the recipes you can find on this site and the Finland Facebook site. At first I thought was going to be very boring eating the same thing over and over. But I have really enjoyed some of the foods I tried and my friends just laugh at me when I tell them my new favorite foods are roasted cauliflower or rutabaga fries
Today for lunch I am roasting broccoli, mushrooms, cauliflower and zucchini and then mixing it with the rotini and a bit of olive oil / vinegar and lemon. I am also adding 2 oz of chicken chopped up. I find eating a little protein at lunch makes you not as hungry at 3:00pm.
If you like chocolate, make the dark chocolate pudding into a smoothy with 5 oz of water and a cup of ice. It stays thick like putting and makes a large cup. My dessert almost every night.
