Need veggie help!!
 
I'm brand new to IP (starting tomorrow) and I don't know what to do about veggies! I'm not a big veggie eater anyway and two cups in one sitting just seems overwhelming! Does anyone have any tips for something I can prepare the night before and take to work with me?

I'm obsessed with roasted veggies!

Any of them work: asparagus, okra, zucchini, cabbage, turnips, cauliflower, etc.

Line a cookie sheet with foil, mist with oil, sprinkle of sea salt, black pepper, garlic powder and cayenne pepper, and roast at 350* for 20 minutes.

Delicious!

If you have a food processor, try making cauliflower rice. I throw a zucchini in there too. Check out the fun with veggie purees on this site. That'll make getting your veggies in a breeze.

I had to teach myself to like the veggies again... it happened. LOVE them.

I struggled with the veggies too. I second what Newbie and Zombie said about roasting and purees. My favorite thing is making veggie soup. Oh, and kale chips - yum! I really like coleslaw made with WF mayo. Some people purée spinach with chocolate shakes and they say you can't taste it. Check out the recipes and you'll find tons of ideas. I am eating (and enjoying) so many different kinds of veggies now thanks to the recipes everyone has shared.

When I first started, I struggled with the veggies. After reading the threads I learned to puree 2 cups of spinach, chocolate drink mix or chocolate pudding with extra water. I have since cut it back to 1 cup as I am learning to experiment with more vegetables.

-roast cauliflower and toss with franks hot sauce and pair with celery for a mock version of buffalo wings.
-cucumbers sliced with seasonings
-kale chips with different spices

I love roasted veggies too.

I find that 2 cups of most veggies cook down to about 1 cup after roasting. My favorite roasted veggies are cauliflower, yellow squash, zucchini & peppers.

HEY LSU TIGER!!! I had to gag down my veggies the first 2 weeks. Now I CANNOT get enough of them. Im in Baton Rouge are you too?

Ragdoll, is yellow quash an approved every day veg for P1? I didn't think it was so I haven't had any!

It is actually a type of zucchini. Other names are golden yellow zucchini and crook neck squash.

At first I was stuck on yellow squash sauteed down or okra smothered down like you'd add to a gumbo. After about a month, I got tired of those and switched to bell peppers raw or smothered....got tired of those too. I went through a roasting phase where anything that would sit on the pan got roasted. Tried the puree thing, not my fave, sorry.
Now I try to mix it up and haven't gotten bored this way. I do celery and bell peppers or cucumber on my lunch salad and then switch it up and try something different for supper. Sometimes I steam broccoli, roast brussel sprouts (the ONLY way I eat those!), smother green beans or put fresh grape tomatoes on my salad (once a week), kale chips, cauliflower rice...I've tried to eat zucchini and find it has a slight fishy taste to me, but I still love my yellow squash (which some say tastes the same as zucchini).
My biggest thing is when I get tired of a veggie, I retire it or find another way of cooking it.
Try not to do the same thing with the same veggie all the time...it gets boring.
Search some of the recipe threads here or do a google search on how to cook a certain veggie. I've printed out tons of recipes I want to try.
