My information indicates that spinach is low-carb (1 cup = 1.1 gram of carbs) and therefore shouldn't be left out unless resulting in getting too many veggies. Am I missing something?

Yup. She had more than 4 c. veggies when putting the spinach in the smoothie

So, I tend to put dinner on a big bed of lettuce, which reduces my need for veggies with dinner & then I can still have my spinach smoothie
I usually have 1-2 c. spinach in my breakfast smoothie
1-2 c. lunch veggies
salad with dinner (or more veggies if one serving was 1 c.)
This is where pre-planning is SO important.
You can even cut the 2 c to 1.5 so you reserve 1 c spinach for the smoothie.

D - 8oz NY Strip steak with steamed green beans (dinner out)
S - Vanilla drink as a eggnog frosty (blended with water/ice and rum extract in bullet, topped with nutmeg so good!)

You don't necessarily have to leave out the spinach - just make an adjustment to your veggie portions later in the day. If you use 1 cup of spinach in your smoothie, just have 1 cup of veggies at lunch with some extra lettuce!

Today is a bit of a hard day as I am rushing from work to my brother's house via public transit (I live in a major city), but the opposite way from my house about 45 minutes), to care for my infant niece. Nothing in the world that I wouldn't do for them or her, but I haven't got veggies. I will likely go to the nearby Target at lunch to see what "steamers" they have so I can get my cups in.
