B IP milk chocolate pudding smoothie w/ decaf coffee, 1 c raw spinach
1 c decaf coffee w/ 2 oz vanilla drink

L: Taco salad.
8 oz lean ground beef seasoned with cumin, garlic, pepper, chili powder
3 c lettuce
1/2 c chopped onion
1/2 c chopped peppercini
dressing: WF miracle mayo, Braggs ACV, chipotle chili, cumin, garlic pepper

D: 8 oz chicken breast & thigh, 1 c green beans

S: Quest bar, 1 c kale chips

I brown it
I make a rub (literally no measurements) garlic pepper, cumin (lots), chili powder, a little chipotle chili, garlic salt, and some garlic powder.
When it is done I shred it like pulled pork.

Sounds yummy, and easy, and great for workdays! I will definitely be trying this one. Too late today, my husband'd going to grill it.

Oops I am a rookie at posting, I posted a new thread and cluttered everything up, sorry. I am posting again here because this is really delicious.

Is it me or does this food actually start tasting yummy? I just enjoyed the most delicious lunch, I wish I had taken a photo but I ate it before I thought of it :-)

Stuffed Portobello Mushroom

1 IP chicken patty
2 oz cold water
1 portobello mushroom cap (about 4 inch diameter or so)
1/8 cup diced red pepper
1/8 cup chopped green onion
1 clove garlic

Preheat oven to 400
Mix chicken patty mix with cold water and let stand for 5 minutes as per package directions to thicken.
Add the diced pepper and onion to the patty mixture to combine.
Crush one clove of garlic into the portobello mushroom cap, and stuff the patty mix into the mushroom cap. It was a lot of filling, so I mounded it up and smoothed it over.
Bake at 400 for about 20-25 minutes, until the mushroom is softened and the top of the filling is a little brown (it won't get golden since there is no fat added, but will darken in a few parts and be nice and crunchy on top)
Fork and Knife this one and enjoy!

I had this with a big romaine salad simply dressed with sea salt, dried oregano, 1 tsp of EVOO and a little squeeze of lemon juice.

Perfect and delicious lunch-I think I could eat this every day- Enjoy!

B - Chocolate Mocha Frappuccino - IP recipe

L - Subway Chopped Veggie Salad w/oil & vinegar (spinach, regular lettuce, green peppers, cucumbers, dill pickles) almost forgot the RTD Mango drink.

D - Chinese Fried "Rice" (IP recipe) with cubed sauteed chicken. I sauteed the chicken with grapeseed oil, garlic, ginger and a touch of soy sauce before adding it to the Fried Rice recipe.

My snack tonight will be the caramel nut bar.

Just finished dinner and the Chinese Fried "Rice" was so delicious! DH liked it and so did my 20 year old son. He said he thought the cauliflower was a nice replacement and tasted like rice! I enjoyed this dinner so much I felt like I cheated. It's funny how something so simple can make me so happy. lol. I was feeling very hungry today!!!!! :carrot:

Just be careful using the vinegar at Subway...it's red wine which we're not allowed to have. I find I don't need or miss it because of the juice from the pickles!

B- Herb and Cheese omelette with a little green onion and doused in tapatio. I have to chew this and swallow without allowing myself to taste it. Not a fan.

L- 2 cups chopped portobello mushrooms water sauteed with crushed garlic, thyme, black pepper and salt, mixed into chicken ala king. This is my favorite "soup", huge romaine salad with EVOO, lemon juice, salt and oregano.

s- Apple Cinnamon puffs - I like that there are a lot of these in the bag, they remind me of cinnamon toast crunch cereal

D- Filet mignon, asian stir fry (bean sprouts, mushrooms, garlic, green onion, zucchini, light soy sauce), another huge romaine salad like lunch.

I was a vegetarian before starting IP and am enjoying eating meat again surprisingly. My DH can't get used to seeing me saw away at a steak, its so foreign!
