I skipped the milk and only added 1 tsp of oil and it came out great. I have found when baking bread, cookies or muffins if I turn off the oven at the right time and leave them in oven for another 10-15 minutes they come out perfect. Everyone's oven is different, of course, so this may not work for everyone.

Thanks for the suggestion, I will try that. I am so used to "pouring' batter versus kneading it and patting it in to the loaf. Should I be doing the latter?

Been experimenting with Phase 1 baking lately...came up with a non-restricted Chocolate Banana loaf this afternoon that was quick and easy to make and turned out great! You know it's a success when your kids ask for seconds! =)

CHOCOLATE-BANANA BREAD:

Preheat oven to 350 degrees

Spray a mini-loaf pan with olive oil non-stick spray

In a bowl, mix the following:
1 packet Chocolate Drink Mix
1 packet Banana Pudding Mix
2 egg whites (may also work well with 1 whole egg)
1 tablespoon nonfat milk (could use up to 2 for a total of 1 oz nonfat milk in place of using 1 oz nonfat milk with your coffee in the morning)
2 tablespoons of olive oil
2 teaspoons baking powder
2 teaspoons Walden Farms chocolate syrup (or 1-2 teaspoons Splenda may work well)
1/2 teaspoon Vanilla Extract

Pour all contents into the mini loaf and bake for about 15 minutes.

Yields 2 non-restricted products. You could eat half & share the rest, or eat half the loaf today and half the loaf tomorrow, or eat half the loaf for breakfast and half the loaf for a snack, etc

I just use a spatula to get it into the pan and then kind of shape it into a loaf like shape.

I took your suggestion and it came out great! I did end up adding a little bit of water so the mix was moist. It is so tasty! Thanks for helping me, Ruth Ann!

Rainbow has this amazing recipe using crushed up chocolate soy puffs in mini muffin pans as a crust and then adding pudding mixed with egg white before baking. Her recipe uses a cheesecake pudding from Nashua - which is delicious! But I'm sure you could experiment with others. Her recipe makes enough for two servings, so you can save a batch for later. Check out the Mixin in the Kitchen thread in the stickies. I think it's in the second group of recipes. I've made it several times and it is every bit as good as it looks.

2much2todo - how long did it take you to get rid of 35 lb? Im on my 5th week, only lost 12 so far. need to loose another 20-23 lbs.

I'm going to try this tonight - I haven't really been excited about the WF caramel syrup, but I'm going to give this a go tonight. Did you use the chocolate pudding packet?
