New to IP
Hi everyone:). Just wanted to introduce myself since I am new here. I'm 40 years old and after 3 kids I'm about 25-30 lbs overweight and tired of it weighing me down. Time for a change! I started on Monday and went to see my coach on Thursday. I was already down 3.4 and I have lost 2.2lbs of body fat!! I'm starting to get a little tired of veggies already and I need to find different ways to mix them up. Any advise would be appreciated :). Best of luck to everyone on this "wild" ride :)

Welcome..you will find tons of recipes for those veggies on the recipe stickies..my favorites are rutabega fries and cauliflower fried rice! The first week is the hardest so hang in there!

Welcome! My favorite way to get in veggies is by eating soups. I love cauliflower soup! Here's a great recipe: http://www.nytimes.com/2011/12/13/he...or-health.html
Just be sure to omit the potato and cook it down a bit longer to thicken. If you don't like curry, I suggest this one: http://food52.com/recipes/15247-paul...uliflower-soup They are both delicious! I make a big pot and pour it into individual containers and eat it for lunch during the week. |
Thank you both for the kind welcome. If you don't mind, I have 2 questions.... Where do I find the recipe stickies and a question about the soups. This week I have been having a drink for breakfast and a soup for lunch. I would rather have my own soups, but then how would I get in my 2 packets per day?

Just cut the veggies into equal size pieces, toss with EVOO & sea salt and roast at 450 degrees until nicely browned. |

If you want to make your own soup for lunch to get your 2 cups of veggies, you can always use one of the more "snack"-type packets, or make a shake packet and have that as your lunchtime beverage. |
