Tofu Alfredo
 
FYI...tofu Alfredo is so good, DH even liked it!!! He isn't on IP and doesn't like tofu!!! I added 1/4 cup of good quality parm cheese since I wasn't adding any meat...then I added sauteed mushrooms, scallions and swiss chard. I had it over roasted cauliflower and DH had pasta. It was sooo good!!! :chef: We were discussing the different veggie options to add in the immediate future and meats (chicken or shrimp would be divine) once I am in maintenance. DH's specialty is Alfredo and while this isn't nearly the same as his homemade version, it is a great substitute for an average weekday meal. Thanks for the suggestion! I'm gonna go do some research on tofu possibilities! LOL

YEAH! :D Glad to hear it! Tofu Alfredo is how I introduced tofu to my hubby because I LOVE the stuff and just wasn't going to make two meals a night when I craved it. Check out Nava Atlas. I LOVE her recipes and you can find most online.
