I usually roast mine but I made a version of chicken and rice soup with it.
I grated it, and added it to boiling chicken broth with 8oz of chicken (spiced the soup up with minced onion, parsley and pepper)...Was a good substitute for my comforting families chicken soup. |
I use it so many ways:
Mashed riced for "Fried" rice and chicken riced in stuffed peppers with beef Roasted in the oven alone or with other veggies (my fav) Cauliflower crust pizza Roasted in oven so it gets brownish for "popcorn" We go through a LOT of cauliflower anymore! |
I roast caulifower, chopped leeks, a head of garlic, half a package of celery for 45 minutes at 350 degrees. This is usually 3 full baking sheets. Cool, then puree. This mash then becomes my soup base for the next 7 days. I refrigerate this thick mash as is. It could also be used as a sauce on grilled or roasted protein of choice.
I put 3-4 heaping T of it in a 2 c measuring cup and add water to make 12 ounces (1 1/2 c), microwave for 2 minutes. Add salt, pepper and coconut oil (or olive oil). Enjoy. If I am doing this at dinner, I might add my cooked chopped protein of choice to it. If I am extra hungry at lunch, I might add some miracle noodles to it. Another recipe: roast your cauliflower, mash and then sprinkle with Popcorn Seasonings for incredible flavor (nacho cheddar, cheesy jalapeno, white cheddar, parmesan and garlic, cajun, chili lime, etc. ) see www.kernelseasonings.com if interested but be careful in measuring. They also have sweet flavors I haven't tried yet, will try with zucchini as an experiment. Have the savory ones. Measure carefully and don't over use. Disclaimer- I am not on IP so the recipe below may not be IP-friendly or you may be able to tweak it to suit your needs. It is a recipe for "alfredo" sauce using cauliflower cooked in chicken broth then pureed along with sauteed garlic and onions with a bit of parmesan, salt and pepper.
Though, I have to admit, it makes more for a convincing potato soup/chowder more than it does as an alfredo sauce. |
Thanks everyone..ive never liked cauliflower so Im determined to find a few ways to use it. I cant eat cucumbers and peppers for ever!

I agree with many of the ideas posted above. One not mentioned is to use it for "potato" salad: thaw frozen cauliflower (soak in water for 10-20 minutes), drain, cut into uniform size pieces, dress with olive oil and vinegar, chopped raw onions & celery. Chill & Serve.

Aside from using it in soup, here are my many uses: Mashed "fauxtatos" Rice (fried rice, spanish rice, plain rice, in soup or on salad) Roasted with salt and EVOO Small florets roasted as "popcorn" Hummus pancakes (rice the cauliflower, mix with egg white, cinnamon and splenda) pizza crust |
